Healthy + Easy Chicken…

I saw this easy recipe, and thought I’d give it a try… Recipe called for zucchini and all, but I’ve swapped it with what I find/what we like, and did it during the long Raya weekend… Verdict? Well, could have been better but both Rachel and Tecky enjoyed it, and more importantly, it was easy and healthy (aiyah, need to be healthy once in a while… hahaha)… So that’s good enough I’d say?

For the easy chicken, I placed asparagus, sliced tomatoes and sliced capsicum on a large tin foil, sprinkled with salt and pepper to taste, and placed basil leaves over them… Slit the boneless chicken breast enough to stuff some sliced mozzarella cheese into them, and place on top of the vege, wrapped up the tin foil and put it into 200 degree C pre-heated oven and for 30 minutes…
NOTE: The next time I do it, I might put the temperature a little higher, as I suspect my oven’s temperature is a little low…

I also simply did up some mashed potato, which was pretty easy… I boiled US potatoes until soft (used a knife to poke into the middle to test if it’s thoroughly cooked), then drained it and mashed it up with some salted butter (to taste)… Then I add in some salt, pepper, fresh milk and thick cream (ALL to taste)… As for Rachel, I added some mayonnaise to make it a little tastier…
NOTE: Next time around, I’d probably try some garlic butter…

Cooking in the new house…

That’s right, that’s right…
I COOKED (in fact : baked, roasted as well)!!!

Disclaimer : I prolly cooked in the new house more than I’ve ever cooked my whole life in Malaysia… Even when we were in Australia for a year, we alternated and didn’t quite need to cook that much… Well, excluding instant noodles of all sorts of course… :D

Do not be fooled, as they were premix i bought from ColdStorage… haha…

The texture were more like bread and a little too hard…

In conclusion for my muffins, I’ve gotten a new recipe from the aunt, and is probably getting better at it, well at least Rachel enjoys them…

This, is my first attempt, of preparing brunch…
Roasted lemon and thyme with vegetables… Came out pretty alright…

Everyone loved this… Especially Rachel, since she LURVEs all mushrooms…

Actually, more expensive than eating out… SERIOUSLY! :|

My attempts at main meals does not stop there…
I tried my aunt’s “Honey Lemon Roasted Chicken” THREE times, but it all turn out too salty… So salty that I should name it “Honey Lemon SALTED Chicken” instead… No photo, cuz it’s too deceiving… hahaha…

1 being shortbread which turned out wonderfully, except it’s just too fattening…
This, the other, is cheese cookies, which erm, is taste kinda weird, and ended up in the dustbin…

Lets hope this isn’t the end of my cooking attempts, and most of all, I hope the attempts will improves lar… Else, I might as well just give up and call for delivery… ;)
